The Skylark’s resident cocktail consultant is an industry veteran who has managed cocktail programs for some of New York’s most celebrated establishments, including The Bowery Bar, Balthazar, Pastis, The Park, Freemans, Café Clover, and the Electric Room. Together with hospitality veteran David Rabin, Swet cofounded celebrated cocktail lounge Jimmy at the James. At The Skylark, Swet incorporates seasonal market ingredients to craft classic cocktails with a twist.
